Lemon Cream & Blackberry Fat Bomb (Keto friendly)
Here is a great dessert recipe that is keto friendly from our friend Phyllis Babayale… Enjoy!!!
Blackberry Mixture
- 4 oz cream cheese
- 2 tbsp butter
- 1 tbsp erythritol powder
- ½ tsp vanilla extract
- ⅓ cup blackberries
- erythritol (to taste) 2-3 drops (optional)
Lemon Cream Mixture
- 1 cup heavy cream
- Lemon zest (1 lemon)
- 1 tbsp lemon juice
- ¼ cup erythritol powder
- Add cream cheese, butter, erythritol and vanilla extract in a bowl
- Add blackberries and mash
- Mix well and set aside
- In blender or stand mixer, whip heavy cream
- Add lemon zest, lemon juice, and erythritol and gently fold together
- Place blackberry mixture into molds or ramekins
- Top blackberry mixture with lemon cream
- Place in freezer for approx. 10 minutes
