Lemon Cream & Blackberry Fat Bomb (Keto friendly)

Here is a great dessert recipe that is keto friendly from our friend Phyllis Babayale… Enjoy!!!

Blackberry Mixture

  • 4 oz cream cheese
  • 2 tbsp butter
  • 1 tbsp erythritol powder
  • ½ tsp vanilla extract
  • ⅓ cup blackberries
  • erythritol (to taste) 2-3 drops (optional)

Lemon Cream Mixture

  • 1 cup heavy cream
  • Lemon zest (1 lemon)
  • 1 tbsp lemon juice
  • ¼ cup erythritol powder
  1. Add cream cheese, butter, erythritol and vanilla extract in a bowl
  2. Add blackberries and mash
  3. Mix well and set aside
  4. In blender or stand mixer, whip heavy cream
  5. Add lemon zest, lemon juice, and erythritol and gently fold together
  6. Place blackberry mixture into molds or ramekins
  7. Top blackberry mixture with lemon cream
  8. Place in freezer for approx. 10 minutes
