Vegetable and Black Bean Mix

Ingredients

  • Family bag frozen steamfresh mixed vegetables (or use fresh vegetables washed and cut)
  • Black beans (canned is fine, no salt)
  • Sweet peppers or bell peppers
  • Can of tomatoes and green chiles (Rotel brand)
  • White or Brown Rice (optional)
  1. Microwave steamfresh vegetables and put into a bowl
  2. Heat black beans in a small pot and season to taste. The tomatoes and green chiles can be cooked with the black beans (optional)
  3. Dice sweet peppers/Bell peppers
  4. Add black beans, tomatoes & green chiles, and peppers to the vegetables in the bowl (season to taste)
  5. If using rice, add rice to bowl or add rice in single serve dish along with vegetable mix

** additional options are adding tofu (extra firm, pan fried and seasoned to taste) and a light sauce of your choice (see pictures of this in the collage)
